But some sources claim the "bon" of "bonjiri" comes from its similarity in shape to "bonbori" lanterns. Do you have a source for the "person" etymology?

Oh, my phrasing was unclear, but "parson's nose" (or "pope's nose") is that cut of meat's colloquial name in English: https://en.wikipedia.org/wiki/Pygostyle

The "bonbori" explanation for the Japanese is very interesting, and I was indeed curious about it (since the "jiri" is obvious enough). Thanks!
